Blue Corn Carne Asada Bites with Strawberry-Chipotle Glaze

A pairing for our Cabernet Franc

Every once in a while a wine suggests its own pairing. Our Cabernet Franc shows beautiful roasted strawberry notes alongside savory depth and soft tannins, which inspired this bite.

We wanted something simple, vibrant, and easy to make at home — a small blue corn taco layered with grilled carne asada and a roasted strawberry–chipotle glaze that mirrors the fruit in the wine while balancing its savory character.

The result is a bite that feels both familiar and a little unexpected, highlighting the natural harmony between food and wine.

Blue Corn Carne Asada Bites with Strawberry-Chipotle Glaze

Ingredients

Carne Asada

  • 1 lb flank steak

  • 2 tbsp olive oil

  • 1 tbsp lime juice

  • 1 clove garlic, grated

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • salt and fresh cracked pepper

Strawberry–Chipotle Glaze

  • 1 cup strawberries, halved

  • ½ tsp chipotle in adobo

  • 1 tsp honey

  • 1 tsp balsamic vinegar

  • pinch of salt

To Assemble

  • small blue corn tortillas

  • fresh cilantro, chopped

Instructions

Prepare the glaze

Roast the strawberries at 400°F for about 15 minutes, until softened and slightly caramelized. Blend with chipotle, honey, balsamic, and a pinch of salt until smooth. The glaze should have a gentle warmth and a subtle sweetness.

Marinate the steak

Combine olive oil, lime juice, garlic, cumin, smoked paprika, salt, and pepper. Coat the flank steak and let marinate for 30–60 minutes.

Grill the carne asada

Grill over high heat for 3–4 minutes per side. Let the steak rest for about 10 minutes, then slice thinly against the grain.

Warm the tortillas

Heat the blue corn tortillas in a hot pan until lightly toasted and pliable.

Build the bite

Spread a thin layer of strawberry–chipotle glaze on the tortilla, add sliced carne asada, and finish with fresh cilantro.


The Pairing

The grilled beef softens the wine’s tannins, while the roasted strawberry glaze highlights the Cabernet Franc’s natural fruit. Blue corn adds a subtle earthiness that brings the whole pairing together.
